La Petite Maison's Cocktail – How to Make It

WHere is a home-style interpretation of a drink featured on a new cocktail list. Designed as a large-volume premix that is loaded full of tastes associated with Christmas time, making it ideal for hosting a celebration. Reserve the remaining cordial you can use for morning drinks, puddings, or to mix additional servings of the drink.

The Bikini Cocktail

Makes enough for 10 guests

To make the Clementine Cordial (makes 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar

For the Drink (produces 850ml, to serve 10)

400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, to finish

Method

For the Syrup: Combine all the items in a saucepan, heat until it reaches a simmer, mixing so the sugar melts. Next, turn off the burner and leave to cool completely. Transfer to a sealable bottle, seal keeping it in the fridge, where it will keep for about one month.

Preparing the Premix: Pour the specified liquids into a big jug, leave to sit for an hour, then pass it through , ideally through cheesecloth, to ensure it's completely strained.

To serve: Add 85ml of the premix to a mixing glass filled with ice, and agitate gently for a minute to chill. Strain to a cold coupe glass or similar, garnish with some cranberries and finish with a light spray of the essential oil above the glass.
